Sushi is not an original Japanese dish, but has its origins in a method of preserving freshwater fish developed by the inhabitants along the Mekong River in Southeast Asia. The gutted and cleaned fish was placed in cooked rice in vessels where it was fermented. The rice, which had become sour due to the fermentation process, was discarded before the fish was eaten.
