  • Hickory is a genus of trees found only in North America and East Asia, whose wood we use for smocking our food. The American "Low & Slow" method - i.e. slow cooking and smoking at low temperatures over a longer period of time - prepares our meat particularly gently. The result is an intense flavour and a butter-tender grilled meat with the fine hickory smoke note. Special seasoning methods from East Asia also provide further flavour highlights.
